Ingredients

Scale

Meat and Oil

  • 1 tablespoon olive oil
  • 1 lb ground beef (90/10 or 80/20)

Liquids and Sauces

  • 2 cups beef or chicken broth
  • 1/2 cup tomato sauce or puree
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons soy sauce

Spices and Seasonings

  • 1 tablespoon chili powder
  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons chili flakes
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • to taste kosher salt and black pepper

Instructions

  1. Brown the beef: In a large pot, heat olive oil over medium heat. Add ground beef and cook for 3–5 minutes, breaking up the meat with a spoon until it is mostly browned and no longer pink.
  2. Add liquids and spices: Stir in the broth, tomato sauce, chili powder, cocoa powder, Worcestershire sauce, chili flakes, paprika, soy sauce, onion powder, garlic powder, and cayenne pepper until all ingredients are well combined.
  3. Simmer the chili: Bring the mixture to a simmer. Then lower the heat, cover the pot with a lid, and let it cook gently for 35–40 minutes. Stir occasionally to prevent sticking and allow flavors to meld.
  4. Season and serve: Taste the chili and season with kosher salt and black pepper as needed. Serve hot for a hearty and flavorful meal.

Notes

  • For a spicier chili, increase the cayenne pepper or chili flakes.
  • You can substitute ground turkey or chicken for a leaner option.
  • Leftover chili tastes even better the next day as flavors continue developing.
  • Serve with toppings such as shredded cheese, sour cream, or chopped green onions for added texture and flavor.
  • This chili freezes well – store in airtight containers for up to 3 months.
