Cheat’s Moussaka is a simplified take on the classic Greek dish, layering tender eggplant, a rich spiced lamb filling, and a creamy cheese and yoghurt topping over a bed of soft potatoes. This version speeds up prep with microwaved or boiled potatoes and oven-baked eggplant slices for an easy, flavorful casserole that delivers all the comforting aromas and textures of traditional moussaka with less fuss.

Vegetables and Base

  • 1 eggplant (aubergine), sliced into 7.5 mm (½ inch) rounds
  • 1 tsp sea salt flakes (for eggplant)
  • Olive oil spray
  • 4 medium–large potatoes

Lamb Filling

  • 1 tbsp extra-virgin olive oil
  • 1 onion, finely diced
  • 1 tsp freshly minced garlic
  • 500 g minced (ground) lamb or beef
  • 2 tbsp tomato paste
  • 125 ml red wine (optional)
  • 400 g tinned crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • ¼ tsp ground cinnamon
  • 1 tsp sea salt flakes
  • ¼ tsp freshly cracked black pepper

Yoghurt and Cheese Topping

  • 500 g full-fat Greek yoghurt
  • 125 g freshly grated cheddar
  • 2 eggs
  • ½ tsp sea salt flakes
  • ¼ tsp freshly cracked black pepper
  • 25 g freshly grated parmesan
  • Olive oil spray

To Serve (Optional)

  • 1 sprig oregano, leaves picked
  • Extra-virgin olive oil, for drizzling

Instructions

  1. Preheat oven: Set your oven to 240°C (475°F) or 220°C (425°F) fan-forced to prepare for baking the eggplant.
  2. Salt eggplant: Lay eggplant slices on a wire rack over a baking tray, sprinkle sea salt flakes on both sides and let them sit for 10 to 30 minutes to draw out moisture, improving texture and flavor.
  3. Cook eggplant: Wipe off the salt and moisture with a paper towel. Arrange slices on lined baking trays without touching. Spray generously with olive oil and bake for 15–20 minutes, turning once halfway, until browned and tender. Set aside.
  4. Prepare potato base (choose method):
    Microwave: Place potatoes in a microwave-safe container in a single layer with 60 ml water, cover slightly ajar, microwave for 12–14 minutes until tender. Cool slightly.
    Stovetop: Boil potatoes covered with water by at least 4 cm, simmer 20–25 minutes until fork-tender. Cool slightly.
  5. Peel and slice potatoes: Peel the skins off cooled potatoes with a butter knife (skins come off easily), then cut into 7.5 mm (½ inch) slices. Set aside.
  6. Cook lamb filling: Heat olive oil in a large heavy frying pan over medium-high heat. Add diced onion and garlic, cook 2–3 minutes until softened. Add minced lamb, breaking it up as you cook, until browned, about 5–6 minutes.
  7. Add tomato paste and wine: Stir in tomato paste and cook for 30 seconds. Pour in red wine (if using), cook 1–2 minutes until most liquid evaporates.
  8. Add tomatoes and spices: Stir in crushed tomatoes, oregano, cumin, cinnamon, salt, and pepper. Bring to a simmer, then cook uncovered on low heat for 10–12 minutes to develop flavors.
  9. Prepare yoghurt and cheese topping: In a large bowl, whisk together Greek yoghurt, grated cheddar, eggs, sea salt flakes, and black pepper until smooth.
  10. Assemble moussaka: Reduce oven temperature to 220°C (425°F) or 200°C (400°F) fan-forced. Arrange potato slices evenly in the base of a baking dish. Spread the lamb filling on top, then layer baked eggplant slices evenly over lamb.
  11. Add topping and bake: Drizzle the yoghurt cheese mixture evenly over the eggplant layer using a ladle or large spoon, then sprinkle with grated parmesan. Spray the top lightly with olive oil spray. Bake for 20–25 minutes until the topping is golden and crispy.
  12. Serve: Garnish with fresh oregano leaves and drizzle extra-virgin olive oil, if desired. Serve warm.

  • Salting the eggplant helps remove excess moisture, preventing sogginess and improving texture.
  • The potatoes can be cooked either in the microwave or stovetop according to your convenience.
  • Using red wine is optional but adds depth to the filling’s flavor.
  • This recipe can be made with lamb or beef depending on preference.
  • To speed cooling of potatoes after microwave or boiling, run them under cold water briefly before peeling and slicing.
