Chicken
- 1½ lbs boneless skinless chicken thighs, cut into ¾–1 inch pieces
Mushrooms
- 6–8 oz small crimini or button mushrooms, halved or quartered

- Prepare and season chicken: Dice the chicken thighs into ¾-1 inch pieces and place them into a medium bowl. In a separate container, mix together paprika, granulated garlic, kosher salt, black pepper, granulated onion, oregano, thyme, and cayenne pepper. Add 1 tablespoon of olive oil and the spice mixture to the chicken pieces, tossing everything well to coat evenly. Allow the chicken to rest and marinate for at least 10 minutes to develop the flavors.
- Cook chicken: Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. When the oil is hot, add the chicken pieces in a single layer, making sure not to overcrowd the pan. Sauté the chicken, stirring or turning constantly, until they are lightly browned and fully cooked through, which should take a few minutes.
