Pasta and Beans

Vegetables

Dressing
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp maple syrup
- 1 tsp lime zest
- Juice from one lime (about 2 tbsp)
- 2 cloves garlic, grated or crushed
- 1 tsp ground cumin
- Salt and black pepper to taste
- Cook Pasta: Bring a large pot of salted water to a boil and cook the pasta al dente according to the package instructions. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process and cool it down.
- Mix Dressing: In a large mixing or serving bowl, combine the extra virgin olive oil, red wine vinegar, maple syrup, lime zest, lime juice, grated garlic, ground cumin, salt, and black pepper. Whisk thoroughly to emulsify and blend the flavors evenly.
