This Best Roasted Potato Salad combines perfectly tender roasted baby potatoes with a flavorful homemade dill mayonnaise dressing and crispy bacon bits, making it a delicious and satisfying side dish for any meal.

Ingredients

Scale

Potatoes

  • 2 pounds baby potatoes (halved)
  • ¼ cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt

Toppings

  • 8 strips bacon (cooked and chopped)
  • 3 tablespoons chives (finely chopped)
  • 3 tablespoons dill (finely chopped)

Dressing

  • ⅓ cup mayonnaise
  • 1 ½ tablespoons white wine vinegar
  • 2 tablespoons dill (finely chopped)
  • 1 small shallot (finely diced)
  • 2 tablespoons stone ground mustard
  • 1 teaspoon garlic powder
  • ¼ teaspoon kosher salt (more to taste)

Instructions

  1. Preheat oven: Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper and set aside.
  2. Prepare potatoes: Wash, dry, and halve the baby potatoes. In a mixing bowl, toss the potatoes with olive oil, kosher salt, dried oregano, and garlic powder until evenly coated.
  3. Roast potatoes: Arrange the potatoes cut side down on the parchment-lined baking sheet. Place the baking sheet on the top rack in the oven and roast for 15 minutes, or until potatoes are fork tender.
  4. Broil potatoes: Increase the oven temperature to broil. Flip the potatoes so the cut side is facing up and broil for an additional 5 minutes to achieve a golden, crispy finish.
  5. Make dressing: While the potatoes cook, combine mayonnaise, white wine vinegar, chopped dill, diced shallot, stone ground mustard, garlic powder, and kosher salt in a bowl. Mix well until the dressing is smooth and well blended.
  6. Assemble salad: Remove the roasted potatoes from the oven and allow them to cool for about 10 minutes. Top with chopped cooked bacon, chives, more dill, and drizzle the prepared dressing evenly over the potatoes. Serve warm or at room temperature.

Notes

  • For crispier potatoes, ensure they are spaced apart on the baking sheet, not crowded.
  • Bacon can be substituted with turkey bacon or omitted for a vegetarian version.
  • The salad can be served warm or chilled based on preference.
  • Adjust salt and herbs to taste to customize flavor.
  • Leftover salad keeps well refrigerated up to 3 days.
