Ingredients

Scale

Burger Patties

  • 1 lb. ground beef
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp. unsalted butter, melted
  • 3 slices cheese, such as American

Burger Sauce

  • 1/2 cup mayonnaise
  • 1 tbsp. Dijon mustard
  • 2 tsp. dill pickle juice
  • 1/2 tsp. sweet paprika
  • Freshly ground black pepper, to taste

For Assembling

  • 4 hamburger buns
  • Iceberg lettuce, thinly sliced
  • Tomatoes, thinly sliced
  • White onion, finely chopped
  • Dill pickles, sliced

Instructions

  1. Shape and Season Patties: Shape the ground beef into 4 patties, each about 1 inch wider than your hamburger buns. Generously season both sides of each patty with kosher salt and freshly ground black pepper. Press a wide, shallow indent into the center of each burger to help them cook evenly.
  2. Cook the Patties: Choose your cooking method. If grilling: Preheat your grill to high heat, allowing about 5 minutes. Grill patties undisturbed until a crust forms and the meat is no longer pink, about 6 minutes. Flip the patties and immediately brush melted butter on top. Grill the second side until browned, about 3 minutes. Place cheese slices on the burgers and continue grilling to your preferred doneness, about 3 minutes more for medium. If cooking in a skillet: Heat a cast-iron skillet over medium-high heat until very hot. Cook patties undisturbed until a crust forms and no longer pink, about 6 minutes. Flip and brush melted butter over the top. Cook the second side until browned, about 3 minutes more. Add cheese slices and continue cooking until desired doneness, about 3 minutes for medium.
  3. Prepare the Sauce: In a medium bowl, whisk together mayonnaise, Dijon mustard, dill pickle juice, sweet paprika, and freshly ground black pepper to taste until well combined.
  4. Assemble the Burgers: Spread the prepared sauce on the bottom halves of the hamburger buns. Layer with thinly sliced iceberg lettuce, sliced tomatoes, the cooked cheeseburgers, finely chopped white onion, and sliced dill pickles. Spread more sauce on the top halves of the buns and close the burgers.

Notes

  • Pressing a shallow indent in the center of each patty helps prevent puffing up during cooking for more even burgers.
  • Using melted butter brushed on the patties adds flavor and helps achieve a delicious crust.
  • Feel free to swap American cheese with cheddar or your preferred melting cheese.
  • The sauce can be adjusted with more or less pickle juice for tanginess.
  • For best results, use fresh ground beef with about 20% fat content for juicy burgers.
  • Rest cooked patties for a few minutes before assembling to retain juices.
