Zucchini:
- 3 small/medium zucchini (sliced into 28 very thin slices)
Filling:
- 1 1/2 cups ricotta cheese
- 1/2 pound Italian sausage (ground)
- 1/2 cup mozzarella cheese (shredded)
- 1/2 cup parmesan cheese (grated)
- 1 whole egg
- 1/2 teaspoon garlic powder
- 2 tablespoons fresh basil (chopped)
- 1 tablespoon fresh parsley (chopped)
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Miscellaneous:
- 1 cup Keto Marinara Sauce
- Preheat oven to 400°F. Slice zucchini into thin strips, sprinkle with salt, and let sit for 20 minutes to draw out moisture.
- Pat zucchini dry and bake for 10 minutes.
- Brown Italian sausage.
- Combine sausage with ricotta, parmesan, garlic, herbs, egg, salt, and pepper.
