Cheese Layer

Instructions

  1. Slice the Brie Crosswise: Place the wheel of Brie flat on a cutting board. Rub a little oil on a sharp knife and carefully slice horizontally through the middle of the Brie, as if cutting a bagel in half. Set the top half aside.
  2. Make the Whipped Brie: In a food processor, blend the triple cream Brie (with rind removed) and cream cheese until smooth and creamy. Divide the whipped mixture evenly into two separate bowls.
  3. Add Flavor: In one of the bowls, mix in ¼ cup of finely chopped pistachios and 2 tablespoons of fig jam until fully combined. Spread this flavored whipped Brie on the cut side of the bottom half of the Brie wheel. Place the top half over this layer, press gently, and use a butter knife or spreader to smooth the edges. Refrigerate for 20 minutes to help set the layers.
  4. Finish and Serve: Spread the remaining plain whipped Brie from the other bowl on top of the assembled Brie. Garnish with quartered fresh figs, a drizzle of honey, chopped chives, a sprinkle of flaky salt, and additional chopped pistachios. Serve immediately atop toasted baguette slices fried in olive oil for a crispy, flavorful bite.
