Port Balsamic Reduction

  • ¾ cup port wine
  • ¼ cup balsamic vinegar

Toasted Brioche

  • 4 brioche slices
  • 1 drizzle olive oil

Whipped Brie

  • 8 oz brie

Figs and Toppings

  • 1 pint fresh figs
  • Honey, for drizzling
  • Pistachios, crushed, for sprinkling
  • Chives, chopped, for garnish

Instructions

  1. Port Balsamic Reduction: Add the port wine and balsamic vinegar to a saucepan. Simmer over medium heat until the mixture thickens and coats the back of a spoon. Remove from heat and allow to cool completely.
  2. Toasted Brioche: Trim the edges of the brioche slices and cut each slice in half to form rectangles. Heat a small drizzle of olive oil in a pan over medium heat. Fry the brioche halves until golden brown on both sides. Remove and set aside.
  3. Whipped Brie: Remove the rind from the brie completely. Place the brie in a food processor and blend until very smooth and creamy. Transfer the whipped brie to a piping bag or a Ziploc bag with a corner cut off for easy piping.
  4. Prepare the Figs: Remove stems from the figs and slice them thinly. Lay a piece of plastic wrap on a cutting board and arrange the fig slices in a rectangle large enough to cover each brioche piece. Cover with another piece of plastic wrap and gently press with a rolling pin until the fig layer is evenly thin. Carefully remove the top plastic wrap.
  5. Assemble: Drizzle each toasted brioche slice with the cooled port balsamic reduction. Place the reduction side down onto the prepared fig layer rectangles. Trim the fig edges to fit the brioche slices exactly. Place a cutting board on top and gently flip so the toasted brioche is on the bottom and the figs are visible on top. Pipe whipped brie over each slice, drizzle with honey, and sprinkle with crushed pistachios and chopped chives for garnish.
