Wrap Base

  • 1 cup cottage cheese
  • 1 egg
  • 1/8 tsp salt (omit if using salted cottage cheese)
  • 1/4 tsp Italian seasoning (or substitute with garlic powder, onion powder, black pepper)

Fillings

  • Fresh mozzarella, sliced
  • Arugula, a handful
  • Jarred roasted red peppers, sliced
  • Cucumbers, thinly sliced
  • Avocado, sliced
  • Salt and pepper, to taste
  • Balsamic glaze, for drizzling
  • Chopped fresh basil, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the wrap base.
  2. Blend the Batter: In a small food processor or blender, combine the cottage cheese, egg, salt, and Italian seasoning. Blend until the mixture is completely smooth to ensure an even batter.
  3. Prepare Baking Sheet: Line a small baking sheet (approximately 13″ by 9″) with parchment paper and lightly spray it with cooking spray to prevent sticking.
  4. Spread the Batter: Pour the creamy batter onto the prepared sheet and use a spatula to spread it out as thinly as possible without making the parchment visible underneath. This will create a thin, flexible wrap base.
  5. Bake the Wrap: Bake in the preheated oven for 25 to 35 minutes, checking around 30 minutes. The wrap is ready when the top is golden brown, soft to the touch, and can easily be lifted off the parchment paper.
  6. Cool and Assemble: Let the wrap cool on the sheet for about 5 minutes to firm up. Then lay it flat and layer with fresh mozzarella, arugula, roasted red peppers, cucumbers, avocado, salt and pepper. Drizzle with balsamic glaze and sprinkle chopped basil on top.
  7. Roll and Serve: Carefully roll the wrap tightly but gently to keep the fillings inside. Slice if desired and serve immediately.

  • If using salted cottage cheese, reduce or omit added salt in the batter to avoid oversalting.
  • The wrap base can be made a day in advance and stored in the refrigerator wrapped in parchment or plastic wrap.
