Avocado Egg Rolls

  • 3 large avocados, peeled, pitted, and diced
  • 2 tablespoons sun-dried tomatoes packed in oil, chopped
  • 3 tablespoons minced red onion
  • 1/4 cup fresh cilantro, chopped

  • Vegan egg roll wrappers (Dynasty brand recommended)
  • Oil for frying (about 1 inch deep in skillet)

Jalapeño Ranch Dressing

  • 1/2 avocado
  • 1/3 cup fresh cilantro
  • 2/3 cup vegan sour cream
  • 1 tablespoon lime juice
  • 1 jalapeño, seeds removed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the oil: Heat oil in a large skillet about 1 inch deep over medium/high heat until shimmering and hot enough for frying.
  2. Mash avocado mixture: In a medium bowl, lightly mash the diced avocados with a fork, leaving some chunks intact for texture. Add chopped sun-dried tomatoes, minced red onion, salt, and chopped cilantro; toss gently to combine evenly.
  3. Fill wrappers: Working one egg roll wrapper at a time, place a generous amount of the avocado mixture near one corner of the wrapper.
  4. Roll and seal: Fold the bottom corner of the wrapper tightly over the filling, tuck in the sides, and continue rolling upwards toward the top corner. Moisten the edge with water and press firmly to seal. Repeat this process with the remaining wrappers and filling.
  5. Fry egg rolls: In batches, carefully add the rolled egg rolls to the hot oil and fry for 2-3 minutes, turning occasionally, until they are evenly golden brown and crispy. Transfer onto a paper towel–lined plate to drain excess oil.
  6. Make jalapeño ranch: Add avocado, cilantro, vegan sour cream, lime juice, jalapeño (seeds removed), garlic powder, onion powder, and salt to a food processor. Blend until smooth and creamy.
  7. Serve: Plate the crispy avocado egg rolls and serve immediately with the jalapeño ranch dressing for dipping.
