Ingredients

Scale

Main Ingredients

  • 1 tablespoon vegetable oil
  • 3 cups frozen vegetables (such as cut green beans or a blend of peppers, corn, and snap peas)
  • Kosher salt (such as Diamond Crystal), to taste
  • 1 garlic clove, minced
  • 2 cups leftover white rice, preferably cold or just barely room temperature
  • 2 cups chopped or shredded cooked turkey
  • 2 tablespoons soy sauce
  • 2 eggs, beaten
  • ½ tablespoon toasted sesame oil
  • 1 scallion, sliced

Instructions

  1. Heat the vegetables: Drizzle the vegetable oil into a large nonstick pan and heat it over medium heat until shimmering. Add the frozen vegetables and season with 1 teaspoon kosher salt. Cook, stirring frequently, for 4 to 5 minutes until the vegetables defrost and begin to brown slightly. Add the minced garlic and continue cooking, stirring for about 1 minute, until fragrant.
  2. Add rice and turkey: Incorporate the cold rice into the pan. Use a spatula or wooden spoon to break apart any clumps, ensuring individual grains separate. Add the chopped or shredded turkey and toss everything together for 15 to 20 seconds to combine.
  3. Season the mixture: Drizzle the soy sauce evenly over the rice and turkey mixture. Toss continuously until the soy sauce is well distributed and the rice is evenly coated.
  4. Cook the eggs: Increase the heat to medium-high. Create a well in the center of the rice mixture and pour the beaten eggs into the space. Allow the eggs to set undisturbed for 20 to 30 seconds. Use the spatula to break the eggs apart and fold them into the rice while tossing, continuing until the eggs are fully cooked and evenly mixed throughout the dish.
  5. Finish and garnish: Remove the pan from heat and pour the toasted sesame oil over the fried rice. Add the sliced scallion and give the entire mixture a few good tosses to combine before serving.

Notes

  • For best results, use cold or day-old rice to prevent clumping and achieve a better fried rice texture.
  • You can substitute frozen vegetables with fresh ones according to availability.
  • Adjust soy sauce quantity to taste depending on your preferred saltiness level.
  • Leftover cooked turkey works great in this recipe, making it ideal for using up holiday or roast turkey.
  • Use a large nonstick skillet or wok for best cooking and tossing results.
