  • 2 cups sliced carrots
  • 2 cups sliced sweet potatoes (halved and quartered)
  • 2 cups diced apple

Meat

  • 2 lbs ground lean turkey

Spices & Seasonings

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp salt (divided)
  • 1/2 tsp pepper
  • 1 1/2 tsp rubbed sage (divided)
  • 1/2 tsp cinnamon
  • a sprinkle nutmeg
  • 2 tsp chili powder

Liquids & Other Ingredients

  • 1 Tbs olive oil
  • 3 Tbs tomato paste
  • 3 cups crushed tomatoes
  • 2 cups strained tomatoes (or Paleo marinara sauce)
  • 12 cans kidney beans (optional)

Instructions

  1. Heat the oil: Put 1 tablespoon of olive oil into a large pot and heat over medium heat.
  2. Cook vegetables and spices: Add diced apples, sweet potatoes, and carrots to the pot. Sprinkle with onion powder, garlic powder, 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon rubbed sage, cinnamon, and nutmeg. Stir to combine and cook for 5 minutes, stirring occasionally.
  3. Add turkey: Add the ground lean turkey to the pot and cook for 5 minutes, breaking it up as it cooks.
  4. Incorporate tomato paste and seasonings: Mix in the tomato paste, chili powder, remaining 1/2 teaspoon sage, and remaining 1 teaspoon salt, stirring until the paste is evenly distributed.
  5. Add tomatoes: Pour in the crushed tomatoes and strained tomatoes, stirring well to combine all ingredients.
  6. Simmer the chili: Reduce heat to low-medium and let the chili cook gently for 20-30 minutes until flavors meld and vegetables are tender.
  7. Add kidney beans: If using kidney beans, add them to the chili at the end of cooking and heat through for a few minutes before serving.

Notes

  • You can adjust the number of kidney beans based on preference or dietary needs.
  • If you prefer a spicier chili, add more chili powder or a dash of cayenne pepper.
  • This chili can be made in advance and tastes even better the next day.
  • For a thicker chili, you can simmer it longer or mash some of the vegetables slightly during cooking.
