Ingredients

Scale

Potatoes

  • 1 pound potatoes (peeled and chopped into roughly 2 inch cubes; Russets, Yukon Golds or all-purpose)

Milk Mixture

  • ½ cup whole milk
  • 2 tablespoons unsalted butter
  • ½ tablespoon fresh thyme leaves
  • 2 cloves garlic (crushed; reduce to 1 clove for milder garlic flavor)

Additional Ingredients

  • ¼ cup parmesan cheese (grated)
  • 1 teaspoon Dijon mustard
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 teaspoons truffle oil
  • Fresh chives (optional; alternatives: green onions or fresh parsley)
  • Extra virgin olive oil (for drizzling; alternative: extra melted butter)

Instructions

  1. Simmer Potatoes: Place the peeled and cubed potatoes into a large saucepan or pot. Add enough cold water to cover the potatoes plus a teaspoon of salt. Bring to a boil, then reduce to a simmer and cook for around 15 minutes or until the potatoes can be easily sliced with a knife.
  2. Prepare Milk Mixture: Just before potatoes are done, combine the whole milk, unsalted butter, fresh thyme leaves, and crushed garlic in a medium bowl. Cover and warm in the microwave for about 30 seconds or until the butter is melted. Alternatively, warm gently in a small saucepan over low heat.
  3. Drain and Steam Potatoes: Drain the cooked potatoes in a colander and allow them to steam for one to two minutes to remove excess moisture. Then return the potatoes to the saucepan.
  4. Mash Potatoes with Add-ins: Pour the warm milk mixture over the potatoes. Add the grated parmesan cheese, Dijon mustard, salt, and pepper. Using a masher, mash the potatoes until just smooth; avoid over-mashing to keep a creamy texture.
  5. Incorporate Truffle Oil: Drizzle the truffle oil over the mashed potatoes and mash briefly again to combine the fragrant oil evenly throughout the mash.
  6. Garnish and Serve: Transfer the mashed potatoes into a serving dish and swirl the top with a spoon or spatula for an elegant look. Sprinkle with fresh chopped chives and drizzle a little extra virgin olive oil on top for added flavor and shine. Serve warm and enjoy!

Notes

  • Choose Yukon Gold or Russet potatoes for the best texture.
  • Adjust garlic quantity to your preference for more or less pungency.
  • Do not over-mash the potatoes to avoid a gluey texture.
  • For a dairy-free version, substitute milk and butter with plant-based alternatives.
  • Truffle oil is potent; start with less and add more to taste.
  • Fresh chives add color and mild onion flavor but are optional.
  • Serve immediately for best texture, but mashed potatoes can be gently reheated.
