The Grinch Dumplings are a fun and colorful twist on traditional dumplings, featuring vibrant green tahini sauce and tender turkey filling wrapped in alternating pink and white dough. Dough

  • 200g self-raising flour
  • 160g Greek yoghurt
  • 1 tsp red food colouring

Green Tahini Sauce

  • 2 tbsp tahini
  • ½ lemon, juiced
  • 2 spring onions, finely chopped
  • 1 garlic clove
  • 40g coriander
  • 1 tbsp maple syrup
  • 1 tsp flaky salt
  • 3 tbsp olive oil
  • 5 tbsp water

Filling

  • 300g leftover turkey meat, chopped
  • 2 spring onions, finely chopped
  • 1 tbsp black sesame seeds
  • 4 tbsp green tahini sauce (from above)

Instructions

  1. Make the green tahini sauce: Combine tahini, lemon juice, spring onions, garlic, coriander, maple syrup, flaky salt, olive oil, and water in a blender. Blend until smooth and season to taste.
  2. Prepare the dough: In a large bowl, mix 100g self-raising flour with 80g Greek yoghurt (add a splash more yoghurt if too dry). Stir with a spoon or chopsticks until a shaggy dough forms, then knead for 1 minute. Cover with cling film and set aside. In the same bowl, combine the remaining 100g flour with 80g Greek yoghurt and 1 tsp red food colouring. Mix and knead for 1 minute. Cover and set aside.
  3. Divide dough pieces: Slice each dough batch into 3 pieces, giving a total of 6 pieces.
  4. Roll out dough: Roll out each piece, except one pink piece, into rectangles about 7 inches by 4-5 inches. Roll the one pink dough piece into a sausage shape matching the length of the rectangles.
  5. Wrap the sausage: Wrap the pink and white sausage alternately with the rectangular pieces of dough, layering them to create a multi-colored sausage.
  6. Slice the sausage: Cut the wrapped sausage into 4-6 equal pieces.
  7. Flatten the dumplings: Roll each piece out using a rolling pin to about 3-4mm thick and 4-5 inches in diameter.
  8. Prepare the filling: In a bowl, mix chopped turkey, spring onions, black sesame seeds, and 4 tablespoons of the green tahini sauce.
  9. Fill and shape dumplings: Put a spoonful of filling in the center of each wrapper, then fold and seal the edges in an anti-clockwise motion to form dumplings.
  10. Steam the dumplings: Place each dumpling on parchment paper to prevent sticking. Steam on high heat for 13 minutes.
  11. Serve: Serve the dumplings warm immediately with additional green tahini sauce for dipping and enjoy your festive Grinch Dumplings.

Notes

  • The dough consistency is important; add extra Greek yoghurt if the dough feels dry to ensure softness.
  • If you don’t have leftover turkey, chicken or another cooked meat works well as a substitute.
  • Make sure to place dumplings on parchment paper during steaming to prevent sticking to the steamer.
