Ingredients

  • 1 tsp red food colouring

Instructions

  1. Step 1: Make the green tahini sauce by blending tahini, lemon juice, 2 spring onions, garlic, coriander, maple syrup, flaky salt, olive oil, and water until smooth. Season to taste.
  2. Step 2: Prepare the dough in two batches. In a bowl, mix 100g self-raising flour with 80g Greek yoghurt until shaggy dough forms, knead for 1 minute, then cover and set aside. In the same bowl, combine another 100g self-raising flour, 80g Greek yoghurt, and 1 tsp red food colouring, mix and knead for 1 minute, then cover and set aside.
  3. Step 3: Slice each dough into 3 pieces, making a total of 6 pieces.
  4. Step 4: Roll out each piece of dough (except one pink piece) into rectangles approximately 7 inches by 4-5 inches. Roll the single pink piece into a sausage shape matching the length of the rectangles.
  5. Step 5: Wrap the pink sausage dough in a white rectangular sheet, then continue wrapping alternating colored dough pieces around it to grow the sausage.
  6. Step 6: Slice the rolled sausage into 4-6 equal sections.
  7. Step 7: Roll out each slice with a rolling pin to about 3-4mm thick and 4-5 inches in diameter.
  8. Step 8: Mix the chopped turkey, 2 spring onions, black sesame seeds, and 4 tbsp of the green tahini sauce together to make the filling.
