Instructions

  1. For the Chocolate Mousse: Place the chopped dark chocolate in a large heatproof bowl and set aside.
  2. In a separate large bowl, use a handheld electric mixer to beat the egg yolks and granulated sugar on medium-high speed until the mixture is thick, smooth, and deeply yellow. Set aside.
  3. In a medium saucepan over medium heat, warm 2 cups (454ml) of heavy cream until it just reaches a simmer. Remove from heat.

  6. Pour the warm mixture over the chopped chocolate. Stir until the chocolate is fully melted and smooth. Whisk in the vanilla extract, espresso powder (if using), and salt. Cover the mixture with plastic wrap and refrigerate for 1 to 2 hours until chilled.
  7. Once chilled, use an electric mixer to beat the remaining 1 and 1/2 cups (340ml) of heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the chilled chocolate mixture until evenly combined. Be careful not to overmix to maintain the mousse’s light texture.
