Instructions

  1. Prepare the Butter: Freeze the butter for at least 20 minutes.
  2. Preheat the Oven: Preheat to 425°F with a rack in the upper third and line a baking sheet with parchment paper.
  3. Mix Dry Ingredients: In a large bowl, combine flour, baking powder, sugar, and salt. Whisk until well mixed.
  4. Add Butter: Grate frozen butter into the bowl and mix with a fork.
  5. Combine Wet Ingredients: Pour in milk or buttermilk, stir until dough forms. Add more milk if needed.
  6. Shape Dough: Turn out dough, pat into a rectangle, and fold multiple times.
