  • 100 g unsalted butter, chilled & cubed (7 tablespoons / 3.5oz)
  • 1 large egg, cold

  2. Add Butter: Add cubed cold butter and blitz until sand-like texture.
  3. Add Egg: Process on low until clumps form.
  4. Form Dough: Shape into a disk, roll out, and cut into circles.
  5. Prepare Muffin Tin: Press dough circles into tin holes and chill.
  6. Bake: Preheat oven, prick bases, fill with weights, and bake until golden.
