  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3⁄4 cup water
  • 2 cups salsa
  • Layering Ingredients:

  • 4 large flour tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • Toppings:

  • 1 cup sour cream
  • 1⁄4 cup chopped fresh cilantro
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Cook Ground Beef: In a skillet, brown the ground beef. Drain excess fat.
  3. Add Seasonings: Mix in taco seasoning and water, simmer for 5 minutes.
  4. Combine with Salsa: Stir in salsa and cook for 2 more minutes.
  5. Prepare Layering: Mix black beans and corn in a bowl.
  6. Layer Ingredients: Start with beef mixture, tortilla, bean-corn mix, cheeses. Repeat layers.
  7. Bake: Cover with foil, bake for 25-30 minutes, then uncover and bake for an additional 10 minutes.
  8. Serve: Let cool for 5 minutes and top with sour cream, cilantro, and green onions.
