Dressing:

  • 1/2 c. dried cranberries
  • 1/2 c. crumbled feta
  • 1/4 c. freshly chopped parsley
  • 2 tbsp. apple cider vinegar
  • 1 tbsp. Dijon mustard
  • 1 tbsp. honey
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground paprika
  • 1/4 c. extra-virgin olive oil

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Prepare sweet potatoes: Toss sweet potatoes and red onion in olive oil on a baking sheet, season with salt and pepper, and bake for about 20 minutes until tender.
