  • 1 cup flour (spelt, white, or gluten-free all-purpose)
  • 1/2 cup sugar (or coconut sugar)
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • Optional: 1/2 tsp ground ginger

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F and line a cupcake tin with liners.
  2. Mix Wet Ingredients: In a bowl, whisk together sweet potato puree, water or milk, vanilla extract, white vinegar, and oil. Let the mixture sit for at least 10 minutes.
  3. Combine Dry Ingredients: In a separate bowl, sift together flour, sugar, cinnamon, salt, baking soda, baking powder, and ground ginger (if using).
  4. Form Batter: After the wet ingredients have sat, combine them with the dry ingredients to form a batter. Stir until well incorporated.
  5. Bake: Scoop the batter into the prepared cupcake liners, filling each about 2/3 full. Bake for 18 minutes or until a toothpick inserted comes out clean.
  6. Cool and Serve: Allow the cupcakes to cool before serving. For best flavor, enjoy the cupcakes the next day when the flavors have melded. The liners will also peel off easily after a day.
