Ingredients

Scale

Main Ingredients

  • 3 medium or 2 large sweet potatoes
  • 3 tablespoons avocado oil or olive oil
  • 1 teaspoon chili powder
  • Pinch of chili flakes (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sea salt
  • Black pepper – to taste

Toppings & Garnishes

  • About 1 tablespoon honey
  • Lime wedges, for squeezing
  • Fresh cilantro, chopped
  • Extra chili flakes, for garnish
  • Pumpkin seeds
  • Thinly sliced red onion

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it reaches the optimal temperature for caramelizing the sweet potatoes evenly.
  2. Prepare Sweet Potatoes: Wash and dry the sweet potatoes thoroughly. Slice them into approximately 1/2-inch thick rounds to ensure even cooking and tender texture.
  3. Season Sweet Potatoes: In a large bowl, toss the sweet potato rounds with the avocado or olive oil, chili powder, garlic powder, onion powder, cumin, sea salt, and black pepper until all slices are well coated with the spice mixture.
  4. Roast Sweet Potatoes: Arrange the seasoned sweet potato rounds flat side down on a baking sheet in a single layer. Roast in the preheated oven for 22 to 26 minutes, flipping them halfway through the cooking time to achieve caramelization and tenderness on both sides.
  5. Add Toppings and Serve: Remove the roasted sweet potatoes from the oven and transfer to a serving plate. Drizzle about 1 tablespoon of honey over the top, then garnish with fresh cilantro, a squeeze of lime juice, chili flakes, pumpkin seeds, and thinly sliced red onion for added texture and flavor. Serve warm.

Notes

  • Adjust the amount of chili flakes to your heat preference or omit if you prefer milder flavor.
  • Avocado oil is preferred for higher smoke point, but olive oil works well too.
  • To make it vegan, substitute honey with maple syrup or agave nectar.
  • Ensure sweet potatoes are cut evenly to roast uniformly.
  • Adding pumpkin seeds gives a nice crunch and extra nutrition to the dish.
