Noodles

  • 500 g / 1 lb fresh yellow or white noodles, medium thickness

Sauce

  • 2 tsp sesame oil (toasted sesame oil)
  • 2 tsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp mirin (substitute: 1 tbsp rice wine or 1 tbsp dry sherry with a pinch of sugar)

  • 2 tbsp oil (vegetable, canola, or peanut)
  • 8 green onions, ends trimmed and cut into 7 cm / 2.5” lengths, white parts separated from green parts
  • 2 garlic cloves, finely chopped

Instructions

  1. Mix Sauce: In a small bowl, combine the sesame oil, light soy sauce, dark soy sauce, oyster sauce, and mirin. Stir well to mix thoroughly and set aside.
  2. Cook Noodles: Prepare the fresh noodles according to the package instructions, typically boiling for a few minutes until al dente. Drain and rinse under cold tap water briefly to stop cooking and prevent the noodles from sticking together as they cool.
  3. Sauté Garlic and Onions: Heat 2 tablespoons of vegetable oil in a large deep non-stick skillet or wok over high heat. Add the white parts of the green onions and stir-fry for about 20 seconds to soften and release flavor. Add the finely chopped garlic and stir for another 10 seconds, until it turns light golden and aromatic, being careful not to burn it.
  4. Add Noodles and Sauce: Add the cooked noodles to the skillet, then pour the prepared sauce over them. Toss and stir continuously for 1 to 1 ½ minutes to ensure the noodles are evenly coated and begin to caramelize slightly, enhancing the depth of flavor. If the heat on your stove is low, extend this step to achieve good caramelization without burning.
  5. Finish with Green Onions: Add the green parts of the green onions and toss the noodles just until the green onions are wilted, which should take about 20 seconds. Serve the noodles immediately while hot and flavorful.
