Sugared cranberries are a delightful and festive treat, perfect for garnishing desserts or enjoying as a sweet snack. Fresh cranberries are coated in a simple sugar syrup, then rolled in granulated sugar to create a frosty, sparkling appearance and a balance of tart and sweet flavors.

Ingredients

Scale

Syrup Ingredients

  • 1/2 cup water
  • 1/2 cup granulated sugar

Cranberries and Coating

  • 12 ounces fresh cranberries (rinsed and dried)
  • 1 cup granulated sugar

Instructions

  1. Make the Sugar Syrup: In a saucepan, combine 1/2 cup water and 1/2 cup granulated sugar. Heat over medium heat, stirring occasionally until the sugar completely dissolves, forming a simple syrup. This process takes about 5 minutes. Remove the pan from heat and allow the syrup to cool for 5 minutes.
  2. Coat the Cranberries: Add the fresh cranberries to the warm syrup and gently stir to ensure each berry is evenly coated. Let the cranberries sit in the syrup for 5 minutes. Using a slotted spoon, transfer the cranberries to a wire rack, spacing them out so they don’t touch. This prevents sticking. Let the cranberries dry until they are tacky to the touch, about one hour.
  3. Roll in Sugar: Pour the remaining 1 cup granulated sugar into a shallow bowl. Roll the tacky cranberries in the sugar until each one is fully coated and appears frosted with a crystalline sugar coating.
  4. Final Drying: Place the sugared cranberries on a parchment-lined baking sheet to dry for another hour. Once dried, the sugared cranberries are ready to be used as a garnish or enjoyed as a sweet snack.

Notes

  • Ensure cranberries are thoroughly dried before coating to help sugar adhere better.
  • Use a wire rack for drying to allow excess syrup to drip off, preventing clumps.
  • Sugared cranberries can be stored in an airtight container for up to 3 days.
  • Perfect as decoration for holiday cocktails, desserts, or cheese platters.
