These Strawberry Shortcake Energy Bites are a delightful and nutritious snack, perfect for a quick energy boost or a sweet treat. Made with wholesome ingredients like oats, cashews, and freeze-dried strawberries, these bites are easy to make and even easier to enjoy!

For the Energy Bites:

  • 1 1/2 cups rolled oats
  • 1 cup raw cashews
  • 1/2 cup creamy cashew butter
  • 1/4 cup pure maple syrup
  • 1/4 cup Medjool dates, pitted (about 3-4)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup freeze-dried strawberries, crushed
  • 1/4 cup white chocolate chips
  • 1 tsp coconut oil

For Topping:

  • Freeze-dried strawberries

Instructions

  1. Pour your oats and cashews into a food processor, and pulse them until they’re fine like flour.
  2. Add in your dates, and pulse again for a few times until the dates are chopped.

  3. Add in your cashew butter, maple syrup, salt, and vanilla and blend on low until a sticky dough forms. You may need to scrape down the sides a few times in between blending.
  4. Transfer the mixture to a bowl and stir in your crushed freeze-fried strawberries. Mix well.
  5. Using a 2 tablespoon cookie scoop, or wet hands, roll two tbsp worth of dough into balls. Layer them on a parchment lined tray.
  6. Once all the dough is rolled, freeze the bites for 20-30 minutes.
  7. Melt your white chocolate chips with the coconut oil in 30 second increments in the microwave for about 1 1/2 minutes.
  8. Remove your bites from the freezer and drizzle each one with the chocolate. Top with more crushed berries.
  9. Place them back into the fridge to set for a few minutes.
  10. Keep them stored in the fridge or freezer. I like storing half in the fridge to snack on, and half in the freezer. They’ll stay fresh in the freezer for up to 3 months.
