Oatmeal Base:
- 1 1/2 cups quick oats (or rolled oats)
- 2/3 cup flour (spelt, white, or oat)
- 1/2 cup sugar (or xylitol)
- 1/2 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup oil (or butter)
Strawberry Filling:
- 2 1/2 cups diced strawberries
- 1 1/2 tsp cornstarch (or arrowroot)
- 1 tbsp pure maple syrup (or sweetener of choice)
- Preheat and Prepare: Preheat the oven to 350 F. Grease an eight-inch baking pan or line it with parchment paper.
- Mix Oatmeal Base: In a large bowl, combine oats, flour, cinnamon, salt, baking powder, and sugar. Add oil or melted butter and mix well. Press 2/3 of the mixture firmly into the pan.
- Prepare Strawberry Filling: In a medium bowl, mix diced strawberries, cornstarch, and maple syrup. Spread this filling over the oatmeal base in the pan.
- Add Topping: Sprinkle the reserved oatmeal mixture over the strawberry filling. Press down firmly.
- Bake: Bake for 45 minutes on the center rack until golden brown.
- Cool and Serve: Allow the bars to cool, then refrigerate until chilled. Enjoy plain, with a drizzle of peanut butter, or a dusting of powdered sugar.
