These Strawberry Oatmeal Bars are a delightful treat that balances the sweetness of strawberries with the hearty goodness of oats. Perfect for breakfast or as a snack, these bars are easy to make and even easier to enjoy.

Oatmeal Base:

  • 1 1/2 cups quick oats (or rolled oats)
  • 2/3 cup flour (spelt, white, or oat)
  • 1/2 cup sugar (or xylitol)
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup oil (or butter)

Strawberry Filling:

  • 2 1/2 cups diced strawberries
  • 1 1/2 tsp cornstarch (or arrowroot)
  • 1 tbsp pure maple syrup (or sweetener of choice)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350 F. Grease an eight-inch baking pan or line it with parchment paper.
  2. Mix Oatmeal Base: In a large bowl, combine oats, flour, cinnamon, salt, baking powder, and sugar. Add oil or melted butter and mix well. Press 2/3 of the mixture firmly into the pan.
  3. Prepare Strawberry Filling: In a medium bowl, mix diced strawberries, cornstarch, and maple syrup. Spread this filling over the oatmeal base in the pan.
  4. Add Topping: Sprinkle the reserved oatmeal mixture over the strawberry filling. Press down firmly.
  5. Bake: Bake for 45 minutes on the center rack until golden brown.
  6. Cool and Serve: Allow the bars to cool, then refrigerate until chilled. Enjoy plain, with a drizzle of peanut butter, or a dusting of powdered sugar.

Notes

  • For a crisper texture, bake the bars a little longer.
