This elegant Strawberry Champagne Baked Brie is a delightful appetizer perfect for entertaining. Creamy, melty brie topped with a luscious, syrupy strawberry and champagne reduction, drizzled with honey, and baked to perfection. Served warm with fresh sliced strawberries, it pairs wonderfully with breads and crackers for a sophisticated treat.

Ingredients

Scale

Strawberry Champagne Reduction

  • 1 cup finely diced strawberries
  • 1/3 cup champagne
  • 1 tablespoon honey, plus extra for drizzling

Baked Brie

  • 1 (13 ounce) wheel of brie
  • Additional sliced strawberries for topping

Instructions

  1. Prepare the Strawberry Champagne Reduction: In a small saucepan, combine the diced strawberries, champagne, and 1 tablespoon of honey. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium and let it simmer gently for 7 to 10 minutes, stirring occasionally, until the liquid reduces and thickens into a syrupy consistency. Remove from heat and let it cool slightly.
  2. Preheat the Oven and Prepare the Brie: Meanwhile, preheat your oven to 350°F (175°C). Place the wheel of brie in a medium cast iron skillet or an oven-safe dish. Drizzle the brie with a little honey to enhance its sweetness.
  3. Assemble and Bake: Spoon the prepared strawberry champagne reduction evenly over the top of the brie. Place the skillet or dish in the preheated oven and bake for 12 to 15 minutes, or until the brie is soft and melty inside, indicated by a slight wobble or softness when gently pressed.
  4. Rest and Serve: Remove the baked brie from the oven and allow it to rest for 5 minutes to let the cheese firm up slightly for easier serving. Just before serving, sprinkle with additional sliced strawberries for a fresh burst of flavor and an attractive presentation. Serve warm with your favorite breads and crackers.

Notes

  • You can substitute champagne with sparkling white wine or prosecco if preferred.
  • If you don’t have a cast iron skillet, use any oven-safe dish that fits the brie.
  • For extra flair, add a sprinkle of fresh thyme or a pinch of black pepper to the strawberry reduction before baking.
  • Serve immediately after resting to enjoy the perfect gooey texture.
  • Store any leftovers covered in the refrigerator and gently rewarm before serving.
