  • 12 ounces frozen strawberries
  • 3 tablespoons powdered sugar

Ricotta Filling:

  • 1 ¼ cups powdered sugar
  • 8 ounces cream cheese, softened
  • 1 ½ teaspoon vanilla extract
  • 32 ounces ricotta cheese, drained

Additional:

  • 8 waffle cones
  • Mini chocolate chips (optional)

Instructions

  1. Cook Strawberry Puree: In a saucepan, heat frozen strawberries and 3 tablespoons of powdered sugar until softened. Puree with an immersion blender.
  2. Cool Puree: Chill strawberry mixture in the freezer for 10 minutes.
  3. Prepare Ricotta Filling: Beat cream cheese until smooth. Add vanilla, ricotta, and powdered sugar. Mix until combined.
  4. Combine Mixtures: Blend strawberry puree into ricotta mixture. Chill for 15 minutes.
  5. Fill Cones: Transfer filling to a pastry bag and pipe into waffle cones.
  6. Serve: Top with mini chocolate chips and enjoy!
