Ingredients

Scale

Strawberry Mixture

  • 2 cups fresh strawberries
  • 1 tablespoon white sugar

Dry Ingredients

  • 3 ⅛ cups all-purpose flour
  • 2 cups white sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda

Wet Ingredients

  • 1 ¼ cups vegetable oil
  • 4 large eggs, beaten

Add-ins

  • 1 ¼ cups chopped pecans

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans to prevent sticking.
  2. Prepare Strawberries: Slice the fresh strawberries and place them in a medium-sized bowl. Sprinkle with 1 tablespoon of white sugar and toss to coat evenly, which helps to macerate the strawberries and release their natural juices.
  3. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, 2 cups of white sugar, ground cinnamon, salt, and baking soda. Mix thoroughly to distribute all ingredients evenly.
  4. Combine Wet Ingredients: Blend the vegetable oil and beaten eggs into the sugared strawberries, creating a wet mixture that will add moisture and flavor to the bread.
  5. Mix Batter: Add the strawberry mixture to the flour mixture. Stir gently until the dry ingredients are just moistened — be careful not to overmix to keep the bread tender. Then fold in the chopped pecans for a crunchy texture.
  6. Divide and Bake: Pour the batter evenly into the two prepared loaf pans. Bake in the preheated oven for 45 to 50 minutes. Check doneness by inserting a tester into the center of each loaf — it should come out clean.
  7. Cool: Remove the loaves from the oven and let them cool in the pans on a wire rack for about 10 minutes. Then turn them out of the pans carefully and allow them to cool completely before slicing to preserve their structure and texture.

Notes

  • Fresh strawberries ensure the best flavor, but frozen strawberries may be used after thawing and draining excess liquid.
  • Toasting pecans before adding them boosts their flavor.
  • Make sure not to overmix the batter to keep the bread moist and tender.
  • Store the bread wrapped at room temperature for up to 3 days or freeze for longer storage.
  • This bread can be enjoyed plain or with a spread of butter or cream cheese.
