Ingredients

Scale

Vegetables

  • 8 oz sliced water chestnuts
  • 8 oz sugar snap peas
  • 8 oz sliced mushrooms
  • 1 red bell pepper, sliced
  • 1 bunch of green onions, sliced (about 1 1/2 cups)
  • 4 cups fresh broccoli florets
  • 12 cloves garlic, minced
  • 1/4 cup minced fresh ginger

Other Ingredients

  • 1 tablespoon sesame oil
  • 1 batch stir fry sauce (prepare separately)
  • White rice for serving

Instructions

  1. Heat sesame oil: Warm a large skillet or jumbo cooker over medium-high heat and add 1 tablespoon of sesame oil to coat the pan evenly.
  2. Add vegetables: Add the water chestnuts, sugar snap peas, mushrooms, sliced red bell pepper, green onions, fresh broccoli florets, minced garlic, and minced ginger to the hot skillet.
  3. Stir fry vegetables: Stir fry the vegetable mixture for 20 to 25 minutes, stirring frequently to ensure even cooking. Continue until most of the liquid has evaporated and the vegetables are tender but still retain some crunch.
  4. Prepare sauce: While the vegetables cook, shake together or prepare one batch of your favorite stir fry sauce to add flavor and moisture.
  5. Add sauce and finish cooking: Pour the stir fry sauce over the vegetables, stirring well to coat evenly. Cook for an additional 3 to 5 minutes, allowing the sauce to thicken and cling to the vegetables.
  6. Serve: Remove from heat and serve the stir fried vegetables on their own or over a bed of freshly cooked white rice or noodles according to your preference.

Notes

  • Maintain medium-high heat to quickly cook vegetables while keeping them crisp and bright.
  • Adjust cooking time if you prefer softer or more tender vegetables.
  • Consider preparing the stir fry sauce ahead for convenience.
  • Use fresh ginger and garlic for the best flavor impact.
  • Add tofu, chicken, or shrimp for a protein boost if desired.
