Chicken Salt Seasoning
- 2 (0.2-oz) bouillon cubes
- 2 tsp garlic powder
- 2 tsp onion powder
- 1/2 tsp celery salt
- 1/2 tsp smoked paprika
- 1/4 tsp MSG (optional)
- 1/4 tsp turmeric
- Kosher salt (as needed)
Edamame
- 1 lb fresh or frozen edamame
- 2 tsp kosher salt for boiling water
- 1 tsp chicken salt seasoning (from above)
- Kosher salt for finishing
- Prepare Chicken Salt: In a small bowl, use a fork to crush the bouillon cubes into a fine powder. Add garlic powder, onion powder, celery salt, smoked paprika, optional MSG, and turmeric. Whisk the mixture thoroughly until all ingredients are evenly combined. This chicken salt can be made up to 6 months ahead and stored in an airtight container at room temperature.
- Boil Water: Pour water into a large pot until it reaches about a 1/2 inch depth. Stir in 2 teaspoons of kosher salt, and bring the water to a rolling boil over high heat.
- Steam Edamame: Place the edamame in a steaming basket and lower it into the boiling water pot without submerging the edamame in water. Cover the pot tightly and steam the edamame for 8 to 10 minutes if fresh, or slightly longer if using frozen, until the beans inside are tender.
- Season and Serve: Drain the edamame thoroughly and transfer to a large bowl. Sprinkle 1 teaspoon of the prepared chicken salt over the edamame, season with additional kosher salt to taste, and toss well to evenly coat. Serve immediately while warm.
