  • 1 12-pack King’s Hawaiian Sweet Rolls (or other soft rolls)
  • 12 tablespoons oil (olive oil, neutral oil, or butter)
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 pound shaved steak
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt (to taste)
  • ½ teaspoon black pepper (to taste)
  • 68 slices provolone cheese (regular or smoked)

Topping Sauce

  • 34 tablespoons melted butter (salted or unsalted)
  • 2 teaspoons brown sugar (light or dark, optional)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon dried thyme leaves (or ½ teaspoon fresh thyme, chopped)

Instructions

  1. Preheat Oven and Prepare Seasoning: Preheat your oven to 350°F (175°C) and lightly spray a 9×13 inch baking dish with cooking spray. In a small bowl, combine 2 tablespoons Worcestershire sauce, 1 teaspoon Dijon mustard, 1 teaspoon garlic powder, 1 teaspoon kosher salt, and ½ teaspoon black pepper. Set this mixture aside for seasoning the steak.
  2. Caramelize Onions and Peppers: Heat 1 to 2 tablespoons oil in a large cast iron skillet over medium heat. Add the thinly sliced onion and green bell pepper. Cook, stirring occasionally, until the peppers are soft and the onions have caramelized slightly. Push the vegetables to the side of the pan or transfer them to a plate if space is limited.
  3. Cook Shaved Steak: Increase the skillet heat to medium-high. Add the shaved steak and quickly toss using tongs to prevent clumping. Cook until the steak is mostly browned but still slightly pink in places.
  4. Season Steak: Pour the prepared Worcestershire, mustard, garlic powder, salt, and pepper mixture over the steak and stir well to coat all the meat evenly.
  5. Add Vegetables Back In: Stir the caramelized onions and peppers back into the steak mixture. Remove the skillet from heat once combined.
  6. Slice Rolls and Assemble: Carefully slice the King’s Hawaiian rolls horizontally in half, keeping the rolls intact. Place the bottom halves in the prepared baking dish. Spread the steak and vegetable mixture evenly over the bottom halves, slicing the bottom halves slightly thicker to prevent sogginess.
  7. Add Cheese and Replace Tops: Layer 6 to 8 slices of provolone cheese over the steak mixture. Place the top halves of the rolls back onto the sliders.
  8. Prepare Topping Sauce: In a small bowl, mix together 3 tablespoons melted butter, 1 tablespoon Worcestershire sauce, 1 teaspoon Dijon mustard, 2 teaspoons brown sugar, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, and 1 teaspoon dried thyme leaves.
  9. Brush Sauce Over Sliders: Pour the sauce mixture slowly over the top of the assembled sliders. Use a brush to coat the sides and get between the rolls for even flavor coverage.
  10. Bake the Sliders: Cover the baking dish with aluminum foil and bake for 15 to 20 minutes. Remove the foil and bake for an additional 5 to 10 minutes until the cheese is melted and the tops are golden brown. Serve the sliders immediately while warm.
