These Starbucks-inspired Egg Bites are a creamy, cheesy, and protein-packed breakfast treat. Made with eggs, cottage cheese, gruyère, and bacon, they are baked in a steam bath to create a soft, custard-like texture that’s perfect for a quick, satisfying morning meal or snack.

Instructions

  1. Prepare Oven and Pan: Preheat the oven to 300°F with the oven rack placed in the center position. Place a second rack just beneath it and set an empty baking sheet on the lower rack. Fill this baking sheet with water to create steam during baking. Spray a muffin pan thoroughly with nonstick cooking spray and set aside.
  2. Blend the Egg Mixture: In a blender, combine 8 large eggs, ⅔ cup whole fat cottage cheese, ¼ teaspoon salt, and 3-4 pinches of ground black pepper. Blend the mixture for about 15-20 seconds until it becomes smooth and uniform.
  3. Mix in Cheese: Transfer the blended egg mixture to a large bowl. Stir in 1 ½ cups of shredded gruyère cheese evenly.
  4. Fill Muffin Pan: Using a ladle or measuring cup, pour the egg and cheese mixture into the prepared muffin pan wells, filling each no more than two-thirds full. Try to distribute the cheese evenly throughout the wells while filling.
  5. Add Bacon Topping: Sprinkle ⅓ cup of chopped cooked bacon evenly over the top of the egg mixture-filled wells.
  6. Bake to Set: Place the muffin pan on the middle oven rack, above the water-filled baking sheet, and bake for 30-35 minutes until the centers are set and firm to the touch.
  7. Cool and Remove: Remove the pan from the oven and let the egg bites cool completely before removing them from the muffin pan. To ease removal, gently run a small silicone spatula around the edges of each well before lifting the egg bites out.
