  • 3 large cucumbers (spiralized or julienned)

  • 23 cloves garlic (minced)
  • 2 green onions (thinly sliced)
  • 2 tbsp chili oil
  • 1 tbsp gochujang (Korean red chili paste)
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 2 tbsp soy sauce (low-sodium preferred)
  • 1 tsp sesame oil

Garnish:

  • Toasted sesame seeds for garnish (optional)

Instructions

  1. Cucumber Noodles: Spiralize or julienne the cucumbers and place them in a bowl.
