Ingredients

Scale

Noodles

  • 8 ounces wide rice noodles

Aromatics

  • 2 shallots, sliced
  • 5 cloves garlic, minced
  • 1/3 cup chopped scallions/green onions (white part only, reserve green for garnish)
  • 1 tablespoon fresh grated ginger

Sauces & Seasonings

  • 1 tablespoon oil (olive or vegetable oil)
  • 45 tablespoons low sodium soy sauce or tamari
  • 13 tablespoons chili garlic sauce (adjust to spice preference)
  • 1 tablespoon brown sugar (or coconut sugar)
  • 1 tablespoon sriracha (adjust to taste)
  • 2 teaspoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon red pepper flakes (optional for extra spice)

Instructions

  1. Cook Noodles: Bring a large pot of water to a boil and cook the wide rice noodles according to the package instructions. Drain and set aside.
  2. Sauté Shallots and Garlic: In a large pot or wok, heat the oil over medium heat. Add the sliced shallots and minced garlic, sautéing until they turn golden brown and fragrant, about 5 minutes.
  3. Add Scallions and Ginger: Stir in the white part of the scallions and freshly grated ginger, cooking for an additional 2-3 minutes to build flavor.
  4. Whisk Sauce Ingredients: In a bowl, combine soy sauce or tamari, chili garlic sauce, brown sugar, sriracha, rice vinegar, and toasted sesame oil. Whisk until the sugar dissolves and the sauce is well blended.
  5. Add Sauce to Aromatics: Pour the prepared sauce into the pot with the sautéed aromatics and stir well to combine. Start with the lower amounts of chili garlic sauce and sriracha; you can adjust later.
  6. Toss Noodles with Sauce: Add the cooked noodles into the sauce mixture and toss thoroughly until the noodles are evenly coated. Let the noodles simmer in the sauce for a few minutes to absorb the flavors fully.
  7. Adjust Spice Level: Taste the noodles and adjust the spiciness if needed by adding more sriracha or red pepper flakes. Remember, the heat intensifies as you eat.
  8. Add Optional Vegetables or Protein: You can toss in diced roasted red peppers or any sautéed vegetables like bok choy, carrot, or cabbage. For added protein, stir in cooked chicken, tofu, or your preferred choice.
  9. Garnish and Serve: Finish by topping the noodles with the reserved green parts of the scallions and an extra sprinkle of red chili flakes if desired. Serve hot and enjoy this spicy, garlicky noodle delight!

Notes

  • Adjust chili garlic sauce and sriracha quantities based on your preferred spice level; start low and add more if needed.
  • Wide rice noodles can be substituted with any rice noodles or even thin wheat noodles if preferred.
  • Low sodium soy sauce helps control saltiness, but regular soy sauce can be used if preferred.
  • To make this dish vegan, ensure your chili garlic sauce and soy sauce are free from animal products.
  • Adding vegetables like bok choy, carrots, or cabbage adds extra nutrition and texture.
  • Protein additions such as chicken, shrimp, or tofu can make this a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
