Cookies:

  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1 cup butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups pumpkin purée (16 ounces)
  • 4 cups all-purpose flour, unbleached
  • 2 teaspoons baking soda
  • 3 teaspoons ground cinnamon
  • 1½ teaspoons ground ginger
  • ¾ teaspoon allspice
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ teaspoon baking powder

Icing:

  • 1½ cups confectioners’ sugar
  • ½ teaspoon ground cinnamon
  • 2 tablespoons milk

Instructions

  1. Make the cookies: Preheat the oven to 350° F. Line a large baking sheet with parchment paper. In the bowl of a stand mixer, beat together the sugar, brown sugar, and butter. Add eggs one at a time, then mix in the vanilla and pumpkin. In a separate bowl, whisk together the dry ingredients. Combine wet and dry ingredients, then drop dough onto baking sheet. Bake for 18 minutes.
  2. Make the icing: Whisk together confectioner’s sugar, cinnamon, and milk until thick. Spoon over cooled cookies and let set for about 1 hour.
  3. Serve fresh or store in a sealed container for up to three days.
