Crust

  • 1 1/2 cups graham cracker crumbs (approx. 1 sleeve of graham crackers)
  • 5 Tablespoons butter (melted)
  • 2 Tablespoons granulated sugar

Filling

  • 8 oz semi-sweet chocolate (chopped)
  • 1 cup heavy cream
  • 2 whole large eggs
  • 1/2 teaspoon vanilla extract

Topping

  • 25 large marshmallows

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF to prepare for baking the crust.
  2. Make Crust: In a bowl, mix the graham cracker crumbs, sugar, and melted butter until thoroughly combined. Press this mixture firmly into a 9-inch pie plate, covering the base and sides evenly. Bake in the preheated oven for 7-8 minutes until the crust turns golden brown.
  3. Reduce Oven Temperature: Lower the oven temperature to 325ºF to prepare for baking the filling.
  4. Prepare Chocolate Filling: Heat the heavy cream in the microwave for 1 minute until it is very hot. Pour the hot cream over the chopped semi-sweet chocolate in a bowl and let it sit for 5 minutes. Then whisk the mixture until smooth and fully melted.
  5. Incorporate Eggs and Vanilla: Quickly whisk in the eggs one at a time into the chocolate mixture until fully incorporated. Stir in the vanilla extract until well combined.
  6. Bake the Pie: Pour the chocolate filling into the pre-baked crust. Bake the pie for 22-25 minutes, or until the filling is mostly set and does not jiggle when you lightly shake the pie plate. Remove from oven and let the pie cool completely.
  7. Toast Marshmallow Topping: Just before serving, evenly top the pie with large marshmallows. Place the pie under the oven broiler for 2-3 minutes until the marshmallows turn golden brown. Alternatively, use a kitchen torch to toast the marshmallows evenly.

  • You can substitute milk chocolate or dark chocolate for semi-sweet if preferred, but adjust sweetness accordingly.
