These Easy S’mores Brookie Bars combine the best of brownies, cookies, and s’mores into one decadent treat. Layers of brownie batter, graham crackers, marshmallows, and chocolate chip cookie dough create a delightful dessert that will satisfy any sweet tooth.

Brownie Layer:

  • 1 16 oz pkg brownie mix, made according to package instructions

Cookie Layer:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup unsalted butter (melted)
  • 3/4 cup packed light brown sugar
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 egg + 1 egg yolk (at room temperature)
  • 2 cups semisweet chocolate chips

S’mores Layer:

  • 6 sheets graham crackers
  • 10 ounces jumbo marshmallows

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Prepare the brownie batter according to package instructions.
  2. Whisk together the flour, baking soda, and salt; set aside.
  3. Mix in a medium bowl, cream together melted butter, brown sugar, and white sugar until well blended. Beat in the vanilla and eggs until light and creamy. Mix in the dry ingredients until just blended. Stir in the chocolate chips.
  4. Arrange in a buttered 13×9 baking dish, add the prepared brownie mix. Arrange graham crackers over the brownie batter and add the marshmallows.
  5. Bake for 35-40 minutes or until a toothpick comes out clean. If the top starts to brown, cover with foil. Let it cool completely before cutting into bars.
  6. Shortcut Method: Repeat steps 1-4. Top with the cookie dough, trying to evenly crumble to cover the marshmallows. Bake as directed, and let cool completely before cutting into bars.

Notes

  • For a gooey texture, serve these bars warm with a scoop of vanilla ice cream.
