Tender and flavorful slow cooker steak bites made from chuck roast or sirloin, browned to perfection and simmered in a rich beef broth with onions, garlic, and butter. This easy recipe delivers juicy, melt-in-your-mouth steak bites perfect for a comforting meal.

Ingredients

Scale

Main Ingredients

  • 3 pounds chuck roast or sirloin, cut into cubes
  • 1 tablespoon oil
  • ½ cup onion, finely chopped
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • ¼ cup butter, cut into pieces
  • 1 cup beef broth
  • ½ packet Au Jus mix (optional)

Instructions

  1. Brown the steak bites: Heat oil in a large skillet over high heat. Season the steak cubes generously with salt and pepper. Add the steak bites to the hot oil and brown on all sides for 2-3 minutes per side to develop a delicious crust. Remove the browned steak bites and transfer them to the base of the slow cooker.
  2. Add onions and garlic: Add the finely chopped onions and minced garlic to the slow cooker, distributing evenly over the browned meat. Stir gently to combine the flavors.
  3. Add liquids and seasoning: Pour the beef broth over the meat mixture in the slow cooker. If using, sprinkle the half packet of Au Jus mix evenly over the contents to enhance the savory flavor of the broth.
  4. Add butter and slow cook: Arrange the pieces of butter evenly over the top of the meat and liquid. Cover the slow cooker with the lid and cook on low heat for 5-6 hours or on high heat for 3-4 hours, stirring occasionally to ensure even cooking and coating of flavors.

Notes

  • For the best flavor, use chuck roast which becomes very tender when slow cooked.
  • Browning the steaks before slow cooking adds depth and richness to the final dish.
  • If Au Jus mix is unavailable, you can substitute with a mix of beef bouillon and Worcestershire sauce for a similar taste.
  • Stir occasionally during cooking to prevent sticking and evenly distribute flavors.
  • Serve steak bites with mashed potatoes, rice, or steamed vegetables for a complete meal.
  • Leftovers can be refrigerated for up to 3 days and reheated gently.
