Ingredients

Scale

Beef and Seasonings

  • 34 lbs. beef chuck roast
  • 0.14 oz. Good Seasons Italian dressing mix (2 packets)
  • 6 whole garlic cloves
  • 2 Tbsp. Worcestershire sauce
  • 15 oz. can beef broth

Peppers and Juices

  • 1 cup pepperoncini rings
  • 1/4 cup pepperoncini juice (from the jar, e.g., Mezzetta brand)
  • 1 cup roasted red bell pepper strips (from a jar)

To Serve

  • Hoagie rolls
  • Provolone or Swiss cheese slices

Instructions

  1. Prepare Ingredients: Place the beef chuck roast into the slow cooker. Add the Italian dressing mix, Worcestershire sauce, whole garlic cloves, pepperoncini rings and their juice, roasted red bell pepper strips, and beef broth.
  2. Cook Beef: Cover and cook on LOW heat for 9 to 10 hours, or on HIGH heat for 6 to 7 hours, until the beef is tender and easily shreds with a fork.
  3. Shred Meat: Remove the beef from the slow cooker and shred it thoroughly using two forks.
  4. Degrease Sauce: If desired, remove excess grease from the cooking liquid by placing a paper towel over the surface to soak up fat.
  5. Assemble Sandwiches: Toast the hoagie rolls and layer them with the shredded beef and peppers. Add slices of provolone or Swiss cheese on top, allowing the cheese to melt slightly.
  6. Serve: Serve the sandwiches with the beef juices on the side for dipping, enhancing the flavor and moisture of each bite.

Notes

  • You can adjust the amount of pepperoncini and juice depending on how spicy and tangy you want the beef.
  • Use good-quality hoagie rolls for the best sandwich texture.
  • The cooking time may vary slightly depending on your slow cooker model.
  • For a thicker sauce, you can reduce the cooking liquid after removing the beef by simmering it on the stovetop.
  • Leftover beef can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
