  • 2 Tbsp. finely ground coffee beans or instant coffee

  • 1 Tbsp. onion powder
  • 1 Tbsp. cocoa powder
  • 1 Tbsp. black pepper
  • 1 tsp. sweet paprika
  • 1 tsp. ground coriander
  • 1 tsp. chili powder
  • 1 tsp. ground ginger

Main Ingredients

  • 2 Tbsp. olive oil
  • 3 lbs. chuck roast
  • 1 sweet onion (cut into 8 pieces)
  • 1 cup brewed coffee
  • 1 cup beef broth
  • 3 Tbsp. balsamic vinegar
  • 34 sprigs fresh thyme

Instructions

  1. Prepare the Rub: In a bowl, combine the finely ground coffee beans or instant coffee, coarse salt, smoked paprika, garlic powder, onion powder, cocoa powder, black pepper, sweet paprika, ground coriander, chili powder, and ground ginger. Mix well and store in an airtight container until ready to use.
  2. Apply the Rub: Rub the chuck roast evenly with olive oil to help the spices adhere. Then coat all sides of the roast heavily with the prepared coffee rub, ensuring the meat is well covered for intense flavor.
  3. Prepare Slow Cooker Base: Place the sweet onion pieces at the bottom of the slow cooker. This will act as a bed for the roast and infuse the dish with sweetness during cooking.
  4. Add the Roast and Liquids: Lay the rubbed roast on top of the onions carefully. Pour the brewed coffee, beef broth, and balsamic vinegar around the roast, avoiding pouring directly on the meat to keep the rub intact.
  5. Add Herbs and Cover: Add the sprigs of fresh thyme on top of or around the roast. Securely place the lid on the slow cooker.
  6. Cook the Roast: Set the slow cooker to high and cook for 5 hours, or set it to low and cook for 9 hours, or until the chuck roast is very tender and easily shredded with a fork.
