Instructions

  1. Bring Steaks to Room Temperature: Remove New York steaks from the refrigerator and any packaging, and let them sit on a plate or cutting board at room temperature for at least 30 minutes to ensure even cooking.
  2. Prepare the Dry Rub: In a small bowl, mix together salt, black pepper, white pepper, onion powder, and garlic powder. Rub this seasoning mixture evenly over both sides of each steak to coat thoroughly.
  3. Preheat Oven and Skillet: Preheat your oven to 375°F (190°C). At the same time, place a heavy, oven-safe skillet over high heat on the stovetop until it is smoking hot.
  4. Sear the Steaks: Add vegetable oil and 1 tablespoon of butter to the hot skillet. Sear the steaks for 2-3 minutes on each side until a brown crust forms. Then, hold the steak upright and sear the sides for an additional 2-3 minutes to render the fat. Remove the steaks from the pan and set them aside briefly on a clean plate.
  5. Sauté Vegetables: Add the remaining 1 tablespoon of butter to the skillet. Toss in the quartered mushrooms and trimmed asparagus, seasoning them with salt and black pepper. Cook over medium-high heat for about 2 minutes, stirring gently to coat in butter and soften slightly. Push the vegetables to one side of the pan and return the steaks to the skillet as well.
  6. Finish Cooking in Oven: Transfer the skillet to the preheated oven. Roast for 10-15 minutes to achieve medium-rare doneness, depending on steak thickness and oven accuracy. Use a meat thermometer to check for desired internal temperature (about 130-135°F for medium-rare). Remove the skillet from the oven once done and let the steaks rest before serving.
