For the Patties

  • pounds lean ground beef

For the Mushroom Gravy

  • 1 medium onion, thinly sliced

  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dry mustard powder
  • ½ cup water
  • Remaining 1¼ cups (about) condensed beef broth (from 15.5 ounce can)

Instructions

  1. Sauté Onions and Mushrooms: In a 12-inch skillet, melt the butter over medium heat. Add the thinly sliced onion and cook until softened, about 3 to 4 minutes. Add the sliced mushrooms and continue cooking until the liquid has been released and nearly evaporated. Transfer this mushroom and onion mixture to a bowl and set aside.
  2. Prepare Beef Patties: In a large bowl, combine the lean ground beef, ¼ cup of the condensed beef broth, Panko bread crumbs, egg, garlic powder, and black pepper. Mix gently just to combine, then shape the mixture into six patties approximately 4 inches in diameter.
  3. Make the Gravy Base: In a small bowl, add the tablespoon of flour and about 2 tablespoons of beef broth, whisking until smooth to form a slurry. Then add the remaining condensed beef broth, ketchup, Worcestershire sauce, dry mustard powder, and water. Whisk together to combine.
  4. Brown the Patties: Place half of the beef patties into the same skillet over medium heat. Brown each patty for about 2 minutes per side; they do not need to be fully cooked at this stage. Remove the browned patties to a plate and repeat with the remaining patties.
  5. Combine Patties and Sauce: Return all the browned patties to the skillet. Top evenly with the sautéed mushroom and onion mixture. Pour the prepared sauce over the patties and vegetables.
  6. Simmer to Finish: Bring the skillet contents to a gentle simmer over medium-low heat. Cover the skillet and cook for 14 to 20 minutes or until the beef patties are fully cooked through and the sauce has thickened.
  7. Serve: Remove from heat and serve the Salisbury steaks hot, ideally over creamy mashed potatoes or buttered egg noodles for a delicious, hearty meal.
