  • ½ cup (60g) almond flour
  • ½ cup (60g) shelled pistachios, finely ground
  • ½ cup (120g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (120g) ricotta cheese
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • ½ tsp baking powder
  • ¼ tsp salt

For Serving:

  • ¼ cup (60ml) honey (for drizzling)
  • Additional chopped pistachios (optional)

Instructions

  1. Preheat oven: Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Mix ingredients: Cream butter and sugar in a bowl, then add ricotta, egg, vanilla extract, and almond extract. Gradually mix in flours, ground pistachios, baking powder, and salt until a soft dough forms.
  3. Form dough balls: Roll portions of dough into balls and place on the baking sheet.
  4. Bake: Bake for 12-15 minutes until lightly golden. Cool on the baking sheet for 5 minutes.
