Pineapple Mixture:

  • 2 (8 oz) cans crushed pineapple in juice
  • ⅔ cup brown sugar
  • 2 teaspoons vanilla extract

Cocunut Cool Whip:

  • ⅔ cup shredded sweetened coconut
  • 1 (16 oz) tub cool whip, thawed

Instructions

  1. Cook the Rice: Prepare jasmine rice according to package directions. Approximately 1 ½ cups of uncooked rice yields 3 cups of cooked rice.
  2. Mix with Pineapple: While the rice is still warm, combine it in a large serving dish or mixing bowl with crushed pineapple, brown sugar, and vanilla. Cover and refrigerate for at least 1 hour.
  3. Add Coconut and Cool Whip: After chilling, gently fold in shredded coconut and thawed cool whip. Allow the mixture to sit at room temperature for 30 minutes before serving.
