Zucchini:

  • 2 to 2 1/2 lbs zucchini

White Rice Mixture:

  • 1/2 cup uncooked white rice
  • 1 cup onions, minced
  • 5 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1/2 cup milk, as needed
  • 2/3 cup Parmesan cheese, grated and divided
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Preparation: Preheat oven to 325°F and grease a 2-quart baking dish with butter or oil.
  2. Zucchini Prep: Wash, trim, and grate zucchini. Cook onions in oil until browned. Add garlic, rice, salt, and pepper. Combine with zucchini, milk, and most of the cheese.
  3. Baking: Transfer to dish, cover with foil, and bake until rice is tender. Uncover, drizzle with oil, add remaining cheese, and bake until golden and crispy.
