Ingredients

Scale

Dough Ingredients

  • 3 cups bread flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 tablespoon milk powder (optional)
  • 1 cup whole milk, warm
  • 1/3 cup heavy cream, warm
  • 1 egg

Filling

  • 18 ounces sweetened red bean paste

Topping

  • 1 egg yolk
  • 1 tablespoon whole milk
  • 1 tablespoon sesame seeds

Instructions

  1. Make the dough: In a stand mixer fitted with a dough hook, combine bread flour, sugar, salt, instant yeast, and milk powder. Gradually add warm milk, heavy cream, and egg, and knead on low speed for 10 minutes until the dough is tacky but smooth. Avoid adding extra flour. Cover the dough and allow it to rest for 2 hours or until it doubles in size.
  2. Portion the dough: Lightly flour a clean work surface and divide the dough into 9 equal pieces. Shape each piece into a smooth ball by tucking and pinching the edges underneath. Loosely cover the dough balls with plastic wrap to prevent drying.
  3. Form the red bean buns: Using your hands, stretch each dough ball into a 4-inch circle, keeping the center slightly thicker. Place about 1/4 cup of sweetened red bean paste in the center. Gather the dough edges around the filling and pinch tightly to seal. Roll gently between your hands to smooth out seams and form a neat ball. Place each bun seam-side down on a baking sheet lined with parchment paper.
  4. Create optional flower shape: Dust your hands lightly with flour and gently press down on each bun to flatten slightly. Using scissors, cut 5 slits around the bun to create a flower-like shape.
  5. Second rise: Allow the shaped buns to rest and rise in a warm area for 30 minutes to 1 hour, or until nearly doubled in size. Meanwhile, preheat your oven to 350°F (175°C).
  6. Egg wash and bake: Whisk together the egg yolk and whole milk to make an egg wash. Gently brush the tops of the buns with the egg wash and sprinkle sesame seeds evenly over each bun. Bake in the preheated oven for 20 minutes or until golden brown. Serve warm for the best flavor and texture.

Notes

  • Do not add extra flour during kneading; the dough should remain tacky for the best texture.
  • Ensure the milk and heavy cream are warm to activate the yeast properly during dough making.
  • The milk powder is optional but adds tenderness and richness to the buns.
  • Be gentle when sealing the buns to avoid leakage of the red bean paste.
  • The flower shape is optional and adds a decorative touch to the buns.
  • Serve warm for the best taste and softness of the buns.
