For the Chocolate Cake:
- 1 cup (199g) granulated sugar
- 1 cup (213g) packed light brown sugar
- 1¾ cups (210g) all-purpose flour
- 1 cup (84g) unsweetened cocoa powder
- 1½ teaspoons baking soda
- 1 teaspoon baking powder
- ¾ teaspoon salt
- 2 large eggs, at room temperature
- 1 large egg yolk, at room temperature
- 1 cup (227g) sour cream
- ¼ cup (57ml) whole milk
- ½ cup (113ml) oil (canola, vegetable, or refined melted coconut oil)
- 1 tablespoon vanilla extract
- 1 cup (227ml) freshly brewed coffee or hot water
For the Chocolate Fudge Frosting:
- 8 ounces semi-sweet or bittersweet chocolate, coarsely chopped
- 1½ cups (340g) unsalted butter, at room temperature
- 2¾ cups (426g) sifted confectioners’ sugar
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- Making the Chocolate Cake: Preheat the oven. Prepare baking pans. Mix dry ingredients. Whisk wet ingredients. Combine wet and dry ingredients. Add coffee. Bake and cool cakes.
- Making the Chocolate Fudge Frosting: Melt chocolate. Beat butter and sugar. Add vanilla and melted chocolate. Beat until smooth.
- Assembling the Cake: Level cake layers. Frost between layers and on top and sides. Decorate as desired.
