Ingredients

  • Powdered Sugar: ½ cup

For the Raspberry Lemon Filling:

  • Granulated Sugar: 1 cup
  • Eggs: 3 large
  • Lemon Juice: ½ cup (freshly squeezed)
  • Lemon Zest: 1 tablespoon
  • Raspberries: 1 cup, mashed
  • Cornstarch: 2 tablespoons
  • All-Purpose Flour: 2 tablespoons

For Garnish (Optional):

  • Powdered sugar, for dusting
  • Fresh raspberries and lemon slices for decoration

Instructions

  1. Preparing the Shortbread Crust In a food processor or mixing bowl, combine flour, powdered sugar, salt, and cold butter. Press the mixture into a pan and bake until golden.
